Vegan cheese fondue made from bread

Summer, sun, and sunshine are all well and good, but what about dumplings, casseroles, and vegan roasts? While we miss summer, we're already looking forward to all the culinary highlights that the winter season brings. And there's one specialty we're particularly excited about: vegan cheese fondue!

Ingredients · Servings 2-3 people
  • For the fondue:
  • 1 round, fine-textured loaf of bread
  • 1 tsp onion powder
  • 0.5 tsp garlic powder
  • 0.5 tsp cumin
  • 1 vegan cheese fondue (e.g. from New Roots)
  • Olive oil (for frying)
  • Salt
  • Pfeffer
  • For the side dishes:
  • Broccoli (blanched)
  • cooked artichoke
  • Mushrooms (sautéed)
  • Potatoes (cooked)
  • Jalapenos
  • pearl onions
  • Roasted vegetables (e.g. pumpkin, sweet potato, Brussels sprouts, beetroot)
  • Persimmon (sliced)
  • Apple (sliced)
  • Figs
  • Physalis
  • Tortilla Chips
  • bread cubes
  • Croquettes (baked)
Method · 30 min
  1. Preheat the oven to 180°C (convection). Using a bread knife, cut a horizontal slice off the top of the loaf. Remove the inside of the bread, leaving the sides about 1 cm thick. Bake the bread for 10 minutes at 180°C.
  2. Tip: You can dice the top of the bread loaf and dip it into your fondue.
  3. For the crispy topping, crumble the inside of the bread by hand. Then fry the crumbs in a pan with plenty of olive oil over medium heat for 5–7 minutes, until crispy. Season with onion powder, garlic powder, cumin, salt, and pepper.
  4. Prepare your choice of side dishes. Then, heat the cheese fondue on the stovetop over medium heat and pour it into the bread bowl. Cover the fondue with the crispy topping and serve with your choice of side dishes.

For that extra wow factor (and to save on washing up, ha!), we serve the fondue in a bread bowl. Simply hollow out a whole loaf of bread and bake it in the oven to prevent it from getting soggy. For the same reason, you should use a rather dark, fine-textured bread for your bowl. With very light, fluffy breads, the fondue can leak out. We then use the hollowed-out bread to create a crunchy topping.

So, the fondue is ready, but what do we dip in now? We like to have a wide selection, which can sometimes make table space a bit tight. Cooked broccoli, potatoes, and bread cubes are simply part of a cheese fondue, but have you ever tried croquettes, artichoke leaves, or physalis? If not, you should remedy that as soon as possible. We also love all kinds of roasted vegetables, such as baked Brussels sprouts, beets, or pumpkin. Many fruits like figs, apples, or persimmons are also excellent. Pickled items like mild jalapeños or pearl onions taste delicious with vegan cheese sauce. There are no limits to your creativity here. So grab some bread and let the fondue begin!
