Baked spicy tomatoes with orzo and burrata

This dish of baked spicy tomatoes with orzo is simply so delicious and easy to make. The flavor of the tomatoes becomes extra intense from being baked and together with honey, garlic and spices it becomes absolutely irresistible.

Orzo is a small pasta variety about the size of large grains of rice. They are super delicious in soups, risottos and casseroles – but also in a dish like this, where they are well-companied by tomatoes, herbs, garlic and crunchy Parma ham, topped with burrata.

Baked spicy tomatoes with orzo

500 g cherry tomatoes

4 cloves garlic, whole

1 tablespoon dried thyme

1 teaspoon dried rosemary

1 teaspoon honey

90 g Parma ham

400 g barley pasta

100 g parmesan, finely grated

1 handful fresh basil, coarsely chopped

20 g sesame seeds, toasted

30 g pine nuts, toasted

150 g burrata

4 tablespoons olive oil, for frying

salt and freshly ground pepper

Place the tomatoes, garlic, thyme, rosemary, honey, olive oil and a little salt and pepper in a greased ovenproof dish. Mix well and bake in a preheated oven at 200 degrees for 30 minutes, until the tomatoes burst and the garlic is tender.

Place the Parma ham on a baking sheet lined with baking paper and bake for about 10 minutes at 180 degrees until the Parma ham is crispy.

Cook the orzo according to the instructions on the package and then drain the water.

Remove the dish of tomatoes from the oven and mash the tomatoes and garlic together. Stir finely grated Parmesan into the hot tomatoes to make a delicious sauce and season with salt and pepper.

Place the orzo in a large bowl and toss well with the tomato sauce, fresh herbs and sprinkle with pine nuts and sesame. Arrange in a large serving bowl, topped with a ball of burrata and finally crumble the crispy Parma ham over the top.
