Homemade spaghetti bolognese: the authentic Italian slow-cooked recipe

  • 150g Minced beef
  • 800g Peeled Tomatoes
  • 2 Onions
  • 2 cloves of garlic
  • 2 handfuls of thyme
  • 1 tranches Laurier
  • 1 tablespoon olive oil
  • 1 Sugar

  1. Peel the onions and garlic cloves, then finely chop them to create a smooth and flavorful sauce base. The finer the chopping, the more even the cooking will be and the more easily the flavors will infuse the sauce. Also prepare the peeled tomatoes, thyme, and bay leaf so you have all the ingredients on hand before you begin cooking.
  2. Heat the olive oil in a large skillet or sauté pan over high heat. Once hot, add the chopped onions and garlic. Stir regularly with a wooden spoon for about 3 minutes, until the onions become translucent and slightly softened, without browning. This step gives the Bolognese sauce its initial depth of flavor.
  3. Add the ground beef to the pan, directly onto the sautéed onions and garlic. Mix thoroughly to break up the meat and avoid any large clumps. Continue cooking for 3 to 4 minutes, stirring frequently, until the beef is no longer pink. Make sure to spread the meat evenly so it cooks through and begins to develop its flavors.
  4. Pour the peeled tomatoes into the pan, then add the thyme, bay leaf, sugar, salt, and pepper. Mix well to coat the meat and the tomato aromatics. Then reduce the heat to low and simmer gently for about 10 minutes, stirring regularly, so that the sauce thickens slightly and the flavors concentrate without sticking to the bottom of the pan.
  5. While the sauce simmers, bring a large pot of water to a boil. Salt the water once it's boiling, then add the spaghetti. Stir immediately to prevent sticking. Cook according to the package directions until al dente. Drain thoroughly, but don't let it cool completely.
  6. Remove the thyme and bay leaf from the sauce, then taste and adjust the seasoning with a little salt or pepper if necessary. Divide the piping hot spaghetti among the plates, then generously coat it with the Bolognese sauce. Serve immediately to enjoy a flavorful, comforting, and perfectly cooked dish, perhaps garnished with a few basil leaves or some grated cheese, if you like.
