A slightly sour soup originating from the Giant Mountains is easy to prepare and pleasantly warms you up on cold days. The so-called cuuračka with smoked knee, potatoes and sauerkraut, seasoned with vinegar, will fill you up nicely.

  • 200 g sauerkraut
  • 1 smoked knee
  • 500g potatoes
  • 200 ml sour milk
  • plain flour
  • 3 eggs
  • salt
  • ground pepper
  • caraway seeds
  • vinegar
Method · 50 min
  1. Rinse the cabbage, if purchased, chop it finely and put it in the pot with the kidney beans. Boil it in salted water with cumin and pepper.
  2. Thicken the soup with flour, whisked in milk, and simmer well for about 20 minutes.
  3. At the end, add separately cooked potatoes, beaten eggs, salt and acidify with vinegar (if necessary) and cook.
