Recipe for healthy muffins with honey and flower pollen
Indulging yourself while feeling good about yourself and doing yourself good is entirely possible, as evidenced by this recipe for small muffins with good forest honey and flower pollen.
Ingredients · Servings 6
- 180 g of flour
- 180 g of butter
- 3 large eggs
- - 80 g de sucre
- 2 tablespoons of forest or acacia honey
- 3 g of salt
- 3 g of baking powder
- 10 g of flower pollen
Method · 52 min
- Cream the butter until soft and incorporate the whole eggs using a whisk.
- Add the sugar, salt and honey and mix thoroughly.
- Incorporate the flour, yeast, and then the pollen. Let it rest in the refrigerator for at least 30 minutes.
- After the resting time, preheat the oven to 200°C. Butter and flour small cake or madeleine molds.
- Fill the molds 3/4 full and bake for about 7 minutes at 200°C (to obtain the madeleine hump) then lower the oven to 180°C and continue baking for 5 minutes.
- Sprinkle with pollen and icing sugar. Enjoy both warm and cold.
