Baked potatoes with cottage cheese

Boiled potatoes baked with spicy pepper sausage and spring onions, topped with distinctive Olomouc cheeses and covered with a flavored egg mixture. Everything will firm up nicely in the oven and the surface will turn golden. A hearty lunch accompanied by fresh vegetables or salad.

Ingredients · Servings 1 dose
  • For the potatoes:
  • 750 g potatoes, boiled in their skins
  • 2 pepper sausages
  • 4 spring onions
  • salt
  • ground black pepper
  • For the egg mixture:
  • 4 eggs
  • 100 ml milk
  • 1/2 teaspoon salt
  • ground black pepper
  • nutmeg
  • To finish:
  • 100-150 g Olomouc cheese
  • butter for greasing the baking dish
  • breadcrumbs for lining the baking dish
  • flat-leaf parsley
Method · 1 h 10 min
  1. Preheat the oven to 200 °C. Grease a baking dish with butter and sprinkle with breadcrumbs.
  2. Peel the cooked and cooled potatoes and cut them into slices.
  3. Peel the sausages as needed, halve them lengthwise and cut them into half rings.
  4. Wash the spring onions and cut them into rounds.
  5. Mix the potatoes, sausage and spring onions. Season lightly with salt and pepper and spread the mixture into the prepared baking dish.
  6. Place the baking dish in the preheated oven and bake the mixture for 15 minutes.
  7. Beat the eggs with the milk. Add 1/2 teaspoon of salt, ground black pepper and a pinch of nutmeg.
  8. Remove the baking dish from the oven. Cut the cheese into pieces and spread them evenly over the potatoes.
  9. Pour everything with the prepared egg mixture.
  10. Return the baking dish to the oven and reduce the temperature to 180 °C. Bake for another 20-25 minutes, until the eggs are set and the surface is golden brown.
  11. Sprinkle the finished potatoes with chopped parsley.
  12. Serve with fresh vegetables or vegetable salad.
