Ingredients for about 20 biscuits

  • 3 large bananas
  • 180 g of wholemeal flour
  • 30 g of cornstarch
  • 80 g of melted light butter
  • 1 sachet of baking powder
  • 1 sachet of vanilla

Making light biscuits with ricotta, banana and dark chocolate

To make these delicious cookies, start by peeling the bananas, chop them into a bowl, mash them well with a fork, add the butter, cornstarch, vanilla, baking powder, and ricotta, then mix with a spatula.

Once you've obtained a soft, grainy mixture, gradually add the whole wheat flour. It should be incorporated and allowed to absorb almost completely before adding more. Once you have a smooth, even dough, wrap it in plastic wrap and let it rest for 15 minutes in the refrigerator.

After the indicated waiting time, take the dough and shape it into balls of roughly the same size, using a spoon or a fork. Place them on a baking sheet lined with parchment paper and flatten them slightly. Finally, bake your cookies in a preheated oven at 180°C (350°F) for about 15-20 minutes.
