Strupacky with smoked meat and sauerkraut

Strapačky (Slovak dumplings) are prepared in many ways, but they are always a quick and filling meal. Because they are easy to prepare, even for beginners, they remain popular across generations.

Ingredients · Servings 4
  • Dusters:
  • 1 kg brambor
  • 5 eggs
  • 250 g semi-coarse flour
  • Further:
  • 2 medium onions
  • 200 g cooked smoked meat
  • 400 g sauerkraut
  • 3 tablespoons lard
  • 4 tablespoons caster sugar
  • 2 tablespoons fresh flat-leaf parsley
  • salt
  • ground pepper
Method · 1 h
  1. Peel the potatoes and grate them on a fine grater. You can blend them a little more, but it is not necessary. Mix with flour, eggs and salt.
  2. Peel and dice the onion. Dice the smoked meat. Drain the sauerkraut.
  3. Push the potato dough through a sieve (for gnocchi) into a pot of boiling salted water. When the gnocchi float to the surface, cook for another half minute. Drain and let drain.
  4. In a large pan, sauté the chopped onion and smoked meat in the heated lard until translucent.
  5. Add the drained cabbage. Season with salt, pepper and sugar.
  6. Finally, add the cooked gnocchi and mix. Garnish with finely chopped parsley leaves on the plate.
