Yeast soup

A thick soup for real men that will fill you up in the summer and warm you up in the winter? That's good old yeast soup! Replace the lard in the recipe with vegetable oil and you can serve this easy and nutritious delicacy to vegetarians, who will surely enjoy it too.

Ingredients · Servings 4
  • 42 g fresh yeast
  • 1 onion
  • 1 carrot
  • 1 parsley
  • 1 slice of celery
  • lard
  • salt
Method · 55 min
  1. Clean, wash and cut the carrots, parsley and celery into small cubes.
  2. Peel the onion and chop finely.
  3. Heat the lard in a pan and fry the onion in it.
  4. Add the yeast to the browned onion and fry together until a crust forms in the pan.
  5. Meanwhile, pour 1 liter of cold water into a soup pot and stir in the browned yeast and onion. Bring the mixture to a boil. Add salt to taste.
  6. Add the chopped root vegetables to the boiling soup and cook, covered, over low heat for about 30 minutes, until the vegetables are completely soft.
