Albert's cake

Albert sponge cake is suitable for all occasions. Thanks to the cottage cheese filling, the sponge cake is soft and will surprise you with a beautiful mosaic when cut. All you need is two bowls, in which you simply whisk the necessary ingredients and then simply layer them in a mold and bake.

Ingredients · Servings 1 where
  • Dough:
  • 3 eggs
  • 150 g caster sugar
  • 60 ml of oil
  • 100 ml milk
  • 300 g semi-coarse flour
  • 2 tablespoons cocoa
  • 1 baking powder
  • Filling:
  • 500 g soft cottage cheese in cubes
  • 2 egg yolks
  • 4 tablespoons powdered sugar
  • 1 vanilla sugar
  • 1 vanilla pudding powder
  • 100-150 ml milk
  • Further:
  • grease for removing molds
  • coarse flour for dusting
Method · 1 h 10 min
  1. Grease the cake tin and sprinkle with coarse flour.
  2. Mix the cottage cheese with the egg yolks, sugar, vanilla sugar, pudding powder and milk with a fork.
  3. Beat the whole eggs and sugar until light and thick. Add the oil and milk and mix with a wooden spoon. Gradually add the flour mixed with cocoa and baking powder.
  4. Preheat the oven to 180 °C.
  5. Pour about a third of the dough into the prepared pan and spread the smaller half of the cottage cheese filling on it. Cover with the second third of the dough and distribute the rest of the cottage cheese mixture on top. Cover the cottage cheese with the remaining third of the dough.
  6. Place the mold in the preheated oven and bake for about 45 minutes.
  7. Check the dough for doneness with a skewer.
  8. After baking, let the cake cool in the pan for a while, then carefully turn it out and let it cool completely.
