Orange salad with honey cream

HOW TO DO IT

Wash the orange for the marinade and dry it with some kitchen paper. Use a zester or similar and grate the zest finely (only the orange). Squeeze out the orange juice and put it in a bowl together with the orange zest and most of the honey. Stir until the honey is dissolved, and season with more honey if necessary. (If you don't have liquid honey, you may need to boil the mixture to mix everything together, and then let it cool.)

Peel the rest of the oranges, making sure to remove all the white pith. Cut the oranges into thin slices. Arrange the slices on a platter or in a wide bowl and drizzle some of the marinade over them.

Stir together the yogurt and honey. Taste until you get a nice balance between the sour yogurt and the sweet honey.

Scatter fresh herbs over the orange salad when serving, and serve the rest of the marinade and honey cream as a side dish.
