Tripe mushroom soup

Tripe soup is very popular in general. However, many are put off by the difficult preparation and unpleasant smell of cooking beef tripe. That's why we offer you an alternative in the form of this fragrant and tasty soup.

Ingredients · Servings 4
  • 500 g oysters
  • about 100 g butter
  • 1 teaspoon hot pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon sweet paprika
  • 3 cloves of garlic (Czech)
  • plain flour
  • salt
  • marjoram
  • parsley
Method · 45 min
  1. Cut the mushrooms and salt them, heat some butter and sauté the mushrooms in it. Then pour in the broth, if you have it, use it. Cook until soft.
  2. Make a roux from the remaining butter and plain flour, then add the pepper mixture and fry. Be careful not to burn the soup so that it doesn't become bitter.
  3. Gradually pour the broth and oysters over the roast so that everything is combined.
  4. Add the crushed garlic and marjoram. Let it cook. Garnish with parsley before serving.
