Mini pancakes with lemon cream

A delicious dessert, especially for our kids: let's make mini pancakes with lemon cream together.

A quick and easy recipe that both adults and children will love. Let's see what we need to make them.

Ingredients

  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 100 g of 00 flour
  • 150 ml of milk
  • 1 large egg
  • 1 tablespoon stevia sweetener

For the lemon custard.

  • 100 g of water
  • 1 tablespoon of flour
  • yellow dye
  • Juice of half a lemon
  • 60g of stevia sweetener
  • Peel of 1 lemon

Mini pancakes with lemon cream: method

In a bowl, add the yeast, salt, sweetener, and flour and begin mixing the dry ingredients. In another bowl, combine the milk and egg. Once well combined, pour it into the bowl with the dry ingredients.

Mix until the mixture is smooth.

Separately, take a nonstick pan and lightly butter it. Once it's ready and hot, gradually pour in spoonfuls of the mixture to create small pancakes. Be careful to cook them on both sides without burning them.

After cooking the pancakes, and while they cool, prepare the lemon cream. In a saucepan, add the sweetener and a little water and melt over low heat until it becomes syrupy. Then, add the lemon zest, turn off the heat, and let it simmer for a few minutes.

Once ready, peel the apples and gradually add the flour, water, and lemon juice. Stir to combine, then place over a low heat, stirring constantly until thickened. Finally, add a pinch of yellow food coloring.

Once the cream is ready, let it cool before filling our mini pancakes.
