Birthday cupcakes – simple & with cream cheese topping

Ingredients · Servings 12 Cupcake
  • 75 ml sunflower oil
  • 100 g sugar
  • 2 No (Gr. M)
  • 150g natural yogurt
  • 1 tsp lemon juice
  • 200 g Flour (Type 405)
  • 2 tsp baking powder
  • 1 pinch of salt
  • 1 packet of vanilla pudding powder
  • 250 g soft butter
  • 250 g icing sugar
  • 1 TL Vanilleextrakt
  • 100g cream cheese
  • 2 tablespoons of colorful sugar decorations (confetti)
  • Birthday cake decoration as desired
Method · 1 h
  1. For the muffins, preheat the oven to 180°C (350°F) (160°C (325°F) for convection ovens). Line 12 muffin tin cups with paper liners. For the batter, whisk together the oil, sugar, and eggs. Stir in the plain yogurt and lemon juice.
  2. Mix the flour with the baking powder, salt, and vanilla pudding powder, then add to the batter. Stir well, then use an ice cream scoop or two teaspoons to divide the batter among the muffin cups. Bake the muffins in a preheated oven for about 25 minutes, or until golden brown. Let the muffins cool completely.
  3. For the frosting, let the butter come to room temperature. Beat the butter with the powdered sugar and vanilla extract for about 5 minutes, until the color lightens slightly and the butter is nice and creamy. Then stir in the cream cheese.
  4. Fill a piping bag fitted with your desired nozzle with frosting. Pipe a swirl of frosting onto each muffin. Sprinkle with colorful sugar confetti and decorate with other birthday cake decorations, such as candles, as desired. Refrigerate until ready to serve.
