Make your own vegan Toffifee

- 165 g vegan caramel candies
- 18 hazelnut kernels
- 70 g vegan Nut Nougat Cream
- 50 g dark chocolate
- Place the caramel candies in a small saucepan and heat slowly until they are completely melted.
- Fill each cavity of the Toffifee mold halfway with the caramel and place it in the refrigerator. After 10 minutes, remove the mold and gently press the caramel firmly into each cavity with your fingers, creating a rim and forming little "baskets". Refrigerate for another 10 minutes.
- Meanwhile, heat the vegan hazelnut-nougat cream in a small saucepan until it becomes nice and liquid.
- Remove the mold from the refrigerator and place a hazelnut kernel in each cavity.
- Pour on the hazelnut-nougat cream and chill again for 30 minutes.
- Meanwhile, heat the vegan dark chocolate in a small saucepan until it becomes liquid and pour it into a bag or sauce bottle.
- Remove the mold from the refrigerator and place a small dollop of chocolate on each Toffifee. Chill again for 30 minutes. Serve the Toffifee at room temperature; they are quite hard when fresh from the refrigerator.
Toffifee are a true childhood memory for me. I've hardly ever enjoyed any other sweet treat as much. It's all the more difficult when you have to give them up due to a dietary change or an intolerance. Apparently, I'm not the only one who misses this little caramel and chocolate candy – you do too! For our "Make a Wish" series, we asked for your recipe requests, and vegan Toffifee came up again and again.
It took me a few tries to get this recipe right. The tricky part is getting a caramel basket that isn't too soft (i.e., runny) but also not rock hard. I finally got the best results with vegan caramel candies. I'm well aware that these aren't available everywhere, but this version came closest to the original taste. You can find vegan caramels in vegan supermarkets or online shops. The rest of the recipe is incredibly easy! Just make sure you let each ingredient cool down completely before proceeding.
We ordered a silicone mold online to ensure the perfect size and easy removal of the Toffifee. Just Google it and you'll find various suppliers and models.
