Spaghetti with Chinese Mustard Greens

This easy-to-make vegetarian spaghetti recipe is fragrant and flavorful with preserved mustard greens, balanced with a sweet and sour touch from cherry tomatoes, and enhanced with the crunchy, savory texture of edamame. It's a delicious and fulfilling vegetarian meal that also brings good karma.

Mae Jin Brand Pickled Mustard Greens

100 grams

Cooked spaghetti

300 grams

Japanese edamame

1/3 cup

Cherry tomatoes, halved.

5 balls

Sea salt and ground black pepper.

Lemon for serving.

Heat olive oil in a pan. Add the button mushrooms and sauté until fragrant. Add the preserved mustard greens (Mae Jin brand) and stir to combine. Add the cooked spaghetti and stir to mix the preserved mustard greens with the pasta. Then add the edamame and cherry tomatoes. Season with salt and pepper to taste. Turn off the heat.

Place the spaghetti with mushrooms and Chinese chives in a bowl and squeeze lemon juice over it.
