Apricot chicken with rice

For the apricot chicken, the first step is to start melting the honey in a pan with the thyme. When the honey is foaming, add 300 grams of the peaches, which we have previously peeled and cut into approx. 0.5 cm cubes.

Season the chicken breast with salt and pepper, then fry in oil heated in a frying pan for about 2-2 minutes on each side. When the meat has a nice crust, place it in the oven preheated to 160 degrees for 10-12 minutes, then remove and let the meat rest for 5-7 minutes before slicing.

When serving, place the meat on the plate, spoon the sauce over it, making sure to get the chunks on top, place the rice next to it, garnish with parsley, and finally pour the remaining peach juice onto the plate.
