Niko Romito in Milan in via Solferino, the bread and panettone in the new laboratory

The Michelin Guide has just confirmed his three stars, but Niko Romito isn't one to stop. And as a skilled (and now also a great) entrepreneur (see Dubai), he continues to open new restaurants and experiment. His first flagship store or laboratory is coming to Via Solferino in Milan.

The group itself announced the opening on its Instagram profiles. The store is scheduled to open on Thursday, November 17th, at Via Solferino 12, the street that has perhaps seen the most buzz and new openings in recent months.

They write on their profile: “In Milan, an open and welcoming city, we are opening the first @laboratorio_nikoromito store.”

In the store, it is added, there will be all the "iconic products" and above all the bread.

Niko Romito Bread is available in four flavors: White Bread with Potatoes, which harks back to an ancient Abruzzo peasant breadmaking tradition; Dark Bread from Solina and Saragolla, using ancient local flour varieties; Olives and Rosemary; and Chocolate and Cherries, perfect for breakfast.

Then there's refrigerator bread. What is it? Cook explains in a preview in the Corriere: "The new refrigerator bread designed and created by the chef is a loaf that's always ready to use, to be stored in the refrigerator and enjoyed at home, warm and crunchy after a few minutes of reheating in the oven. Delicious, easy to digest, and with an intense aroma of wheat and Abruzzo."

Of course, there will be the famous panettone. And it couldn't be otherwise, considering it's Milan. First and foremost, the limited-edition panettone, priced at just €150.

Here's everything you can find in the flagship store:

Panettone, in classic, chocolate and limited edition versions (500 numbered pieces): a special 1.5 kg Panettone enclosed in a linen bag.

Pandolce: a collection of Italian brioches. A leavened cake as soft as a cloud, delicious and incredibly light.

Plum cakes: a line of classic Italian cakes without animal fats and gluten-containing flours.

In addition to leavened products, there is a full organic and vegan assortment: Biscuits, classic and extra chocolate, free from animal or hydrogenated fats, eggs, and palm oil, rich in fiber and suitable for a vegan diet.

Spreadable chocolate without milk and palm oil, fruit spreads (cherry, peach, blueberry, raspberry, apricot, orange, and fig) with very low sugar content, fruit drinks, and savoury snacks – almonds and hazelnuts – in pocket-sized formats or larger sizes for sharing.

All that's left to do is try it and celebrate the new opening of one of our best chefs (here's our visit to Rome). (The legendary Bomba, however, won't be there.)
