Chocolate orange cake
Ingredients
- 25 g dark chocolate (70%)
- 210 g melted butter
- 240 g icing sugar
- 30 g Bitterkakao
- 120 g Mandelmehl
- 80 g flour (type 00)
- 240 g egg whites (equivalent to about 5 medium eggs; room temperature)
- 30 g Orange marmalade
- 12-cavity silicone mold for oval cakes
- 250g dark chocolate
- 30 g Butter
- 50g Stage
- Gold leaf
- candied orange peel
Method
- For the dough, preheat the oven to 170 degrees Celsius (340 degrees Fahrenheit) using conventional oven settings (top and bottom heat). Melt the chocolate in a double boiler, add the melted butter, and stir.
- Sift together the icing sugar, cocoa, and both flours and set aside.
- In a food processor fitted with the whisk attachment, first mix the powdered sugar, flour, and cocoa on low speed, then slowly add the beaten egg whites. A paste should form.
- Add the chocolate-butter mixture and stir gently. Do not overmix.
- Add the orange marmalade and stir. Fill the batter into the oval molds and bake in a preheated oven at 150-170 degrees Celsius for about 15 minutes. Let cool.
- For the chocolate coating, break the chocolate into coarse pieces, place it in a saucepan and melt it in a water bath. Then add the butter and finally stir in the cream.
- Once the cakes are cold, place them on a wire rack and pour the melted chocolate over them so they are completely covered. Repeat if necessary for a more even surface. Decorate with gold leaf and candied orange peel.

Mix the cocoa powder and then slowly add the beaten egg whites. A paste should form.
Add the orange marmalade and stir. Fill the batter into the oval molds and bake in the hot oven.
Bake at 150/170 degrees for about 15 minutes. Let cool.
