Otorongo. Miguel Ponce at Nicanor Drinks House
Miguel Ponce opened Nicanor Casa de Bebidas five years ago in Guayaquil, helping to revitalize the pedestrian zone surrounding the future Cocoa Museum. The concept was, and remains, simple: signature cocktails with a short menu of tapas and small plates to share.
Inspired by the Zombie cocktail and the jaguar, the most powerful feline in America and a god in the worldview of indigenous communities, it is a cocktail with a striking presentation, in its dark glass and its wrapper with Amazonian motifs.
Ingredients for the jaguar
- 75 ml of blend of 3 rums (Plantation Original Dark, Romero n Sons Strength Cask and Flor de Caña 12 years).
- 60 ml of Amazonian cordial (macambo, turmeric, pomegranate, peanut, lemon peel).
- 30 ml of pineapple juice.
- 3 drops of chuchuwaso tincture.
- 1 absence spray.
Ingredients for decoration
- 2 lemon verbena leaves.
- Lemon wedge with design.
- Sorbet.
Glassware: Tall black glass.
Ice: Crushed.
Preparation of the jaguar
- Mix the ingredients in a cocktail shaker with ice.
- Whisk vigorously for 10-12 seconds, strain, serve in a tall, black ceramic glass and garnish.
