The tender salmon pairs beautifully with the sweetness of maple syrup and the zing of Dijon mustard, while walnuts add an irresistible crunch. Also plan for:
30 ml (2 tbsp) of olive oil
15 ml (1 tbsp) of fresh lemon juice
Optional:
15 ml (1 tbsp) chopped fresh dill
Steps
In a pan, heat the maple syrup over medium heat. Add the walnuts and cook for 3 to 4 minutes, until the walnuts are caramelized. Remove from the heat and let cool slightly.
Cut the salmon into small cubes.
In a bowl, mix the olive oil with the mustard, shallots, lemon juice and, if desired, dill. Season with salt and pepper.
Add the diced salmon and half of the caramelized walnuts to the bowl. Stir.
Place a 5 cm (2 in) diameter ring mold on a plate. Fill with tartare and press down with the back of a spoon to even out the surface. Carefully remove from the mold. Repeat to form the remaining portions.
Garnish the tartares with the remaining caramelized walnuts.
