Hut Burger for Thermomix®
streaky smoked bacon (in pieces, 3 cm, partially frozen)

- 40g potato chips
- 50 g streaky smoked bacon
- 40g Gherkin
- 450 g minced beef
- 1 tsp mustard
- 1 tsp tomato paste
- 1.25 tsp salt
- 6 The Pepper Prize
- 2 white onions
- 20 g Butter
- 280 g sauerkraut
- 2 Lorbeerblatt
- 2 juniper berries
- 1 pinch of sugar
- 50 g whipped cream
- 200 g apple juice
- 3 Kill
- 4 rolls
- 2 The Senf
- 2 tbsp Tomato ketchup
- 4 El Wildpreiselbeere
- 2 tbsp chives
Method · 30 min
- Place the chips in the mixing bowl and chop for 8 seconds/speed 8.
- Add the bacon and chop for 6 seconds/speed 6.
- Add the gherkins, chop for 5 seconds/speed 5 and push down with the spatula.
- Add the ground meat, mustard, tomato paste, 1/2 tsp salt and 4 pinches of pepper, knead for 30 seconds/kneading mode, transfer to a bowl and refrigerate, covered, for 20 minutes. During this time, rinse the mixing bowl and continue with the recipe.
- Place the onions in the mixing bowl, chop for 5 seconds/speed 5 and push down with the spatula.
- Add butter and sauté for 3 min./Varoma/speed 1 without the measuring cup.
- Add sauerkraut, bay leaves, juniper berries, sugar, 1/4 tsp salt, cream and apple juice and cook for 25 min/Varoma/speed 1. During this time, form 4 equally sized patties from the minced meat mixture with moistened hands.
- Season the sauerkraut to taste, transfer it to a container, remove the bay leaf and juniper berries, and let the sauerkraut cool until lukewarm.
- Heat oil in a pan, season patties with 1/2 tsp salt and 2 pinches of pepper, fry for 4-5 minutes on each side and keep warm.
- Slice the rolls horizontally and briefly toast the cut sides in a pan. Spread the roll halves with mustard and ketchup, then distribute 1 patty, 2 tablespoons of sauerkraut, 1 tablespoon of cranberries, and 1/2 tablespoon of chives onto the bottom halves. Assemble the burgers and serve immediately.
