Austrian Potato Salad

Wash the potatoes thoroughly, cover with hot water and cook for 20–25 minutes, until done.

Step 2

Peel the onion and garlic. Cut the onion into thin half rings and the garlic into slices. Heat vegetable oil in a frying pan and fry the onion for 4 minutes. Add the garlic and cook for another minute. Transfer to a bowl.

Step 3

Cut the bacon into thin strips and fry in the same pan where the onions were fried for 7 minutes. Place on a paper towel to drain.

Step 4

Drain the potatoes and let them cool. Then peel and slice them. Cut the cucumbers into small cubes and the eggs into large wedges.

Step 6

Combine potatoes, cucumbers, bacon, fried onions, and garlic in a bowl. Drizzle with dressing and toss. Divide among plates and garnish with egg slices. Sprinkle with parsley.
