Mole de Caderas Festival in Oaxaca: Everything you need to know to go

The festival will feature the participation of 10 traditional cooks from the Mixteca region and 10 restaurants from Oaxaca de Juárez affiliated with the National Chamber of the Restaurant and Seasoned Food Industry (Canirac).

The months of October and November are important dates for the Mixteca region: with the end of the rains comes the season of mole de caderas, also called huaxmole or huachimole, a brothy and comforting dish made from goat spine, guajes, costeño chili and aromatic herbs whose data shows that it has existed for approximately three hundred years.

The festival will take place on October 19th and 20th, from 12:00 to 18:00 in the Plaza de la Danza. The opening ceremony will be on October 19th at 12:00.

The Mole de Caderas Festival will also take place in Huajuapan de León, Oaxaca, on October 26th at the Teatro del Pueblo from 2:00 PM to 5:00 PM; framed by the Guelaguetza Ñuu Savi which will begin at 5:00 PM.

Delegations from the Heroic City of Huajuapan of Leon, Santiago Juxtlahuaca, Chalcatongo of Hidalgo, Heroic City of Tlaxiaco, Teotongo, San Juan Baptist Coixtlahuaca, Santo Tomas Ocotepec, Villa of Tamazulapam of Progress, Asuncion Nochixtlán and St. Paul Macuiltianguis.

In addition, from October 12 to November 20, the mole de caderas season, a dish made with white goat bones, will be available in restaurants in Huajuapan de León and the capital of Oaxaca.
