Winter-Spiced Pear and Ginger Overnight Oats Recipe

These luxurious overnight oats are served with lightly whipped cardamom cream, crunchy pistachios and sweet honeyed pears. It's a breakfast that's simultaneously wholesome and decadent, and will make sure start the day in style.

Ingredients
  • 450g of rolled oats
  • 90g of almonds, chopped
  • 100g of dried cranberries
  • 1 tbsp of honey
  • 1 tbsp of ground cardamom
  • 1 tbsp of ground cinnamon
  • 1 tbsp of ground ginger
  • 1.2l whole milk
  • 400ml of double cream
  • 170g of caster sugar
  • 1 pinch of ground cardamom
  • 3 pears, thinly sliced or diced
  • 2 tbsp of honey
  • 1 tbsp of chia seeds
  • 1 tbsp of ground cinnamon
  • 1 tbsp of pistachios, roughly chopped
Method · 30 min
  1. Start the night before you want to make the oats. Mix together the rolled oats, almonds, honey, cranberries, ground spices and a pinch of salt, then pour over the milk. Mix well, then divide between 6 bowls or jars. Cover and place in the fridge overnight
  2. The next day, make the cardamom whipped cream. Whisk together the double cream, cardamom and a pinch of salt, then gradually whisk in the sugar. Mix until stiff peaks form, then transfer to a piping bag fitted with a star nozzle
  3. Pipe a swirl of the whipped cardamom cream over the top of each jar or, if you're using bowls, pipe a blob of the cream and use the back of a spoon warmed in hot water to press a small divot in the centre
  4. Drizzle the pears with honey, then divide between the oats. Garnish with a small pinch of chia seeds, ground cinnamon and chopped pistachios, then serve
