Recipe “California Chili”

Heat the oil in a very large saucepan (or pot) and fry the onions over low heat, stirring occasionally, for about 15 minutes, just enough for the onions to soften slightly.

Increase the heat (medium-high) and add the sausage meat and ground beef, fry in a pan stirring until the meats are well browned, remove any fat that has risen to the surface.

Reduce the heat to medium-low and add the tomato paste, garlic, cumin, chili powder, mustard, basil, oregano, salt, and pepper. Then add the whole peeled tomatoes, wine, lemon juice, dill, parsley, and kidney beans. Mix well and simmer, uncovered, over low heat for at least 15 minutes. Taste and adjust the seasonings.

Serve in a bowl topped with a teaspoon of sour cream, a small handful of grated cheese, a small handful of chopped green onions, and a few drops of lime juice. Ideally served with a slice of warm cornbread on the side.
