  • 1 ½ cups cooked white beans ((or canned white beans))
  • 1 large tomato (diced)
  • ½ large onion
  • 8-10 sprigs of parsley (roughly chopped)
  • 3 tbsp olive oil
  • ½ lemon juice (freshly squeezed)
  • 1 tbsp apple cider vinegar
  • 1 tsp sumac
  • 1 tsp salt
  • 1/4 cup tahini ((optional))
  • 1 hard-boiled egg
  • parsley (roughly chopped)

  1. Thinly slice the onion, sprinkle it with salt, then rub it between your hands to soften it. Transfer to a mixing bowl.
  2. Add the tomato, onion, parsley and beans to the onion in the mixing in bowl.
  3. Add the olive oil, lemon juice, vinegar, sumac, and salt. Toss well until combined.
  4. Transfer to a serving bowl. Garnish with slices of hard-boiled egg and roughly chopped parsley.
