Ingredients · Servings 4
  • olive oil, to drizzle
  • 500g beef mince
  • 400g stir fry veggies (e.g. mixed mushrooms, bok choy, sugar snap peas and snow peas)
  • ½ cup teriyaki sauce
  • 450g udon noodles
Method · 20 min
  1. Heat a large frying pan over high heat and add a drizzle of olive oil. Toss in the beef mince and break it up with a spoon. Let it sit in the pan, so it caramelises—this is where the magic happens!
  2. When the beef is browned and delicious, toss in the stir fry veggies, give everything a good mix so the flavours start to mingle.
  3. Now, it’s sauce time! Pour in the teriyaki sauce along with 1 cup water. Stir everything together until it’s nice and saucy.
  4. Soften the udon noodles in a bowl of warm water for 1 minute, then drain.
  5. Add the noodles to the stir-fry. Using salad servers (trust me, it makes it so much easier!), toss everything together. Once the noodles are fully coated in sauce and everything is nice and hot, your beef mince stir fry is ready.
