Today I'd like to share with you a very interesting recipe for a delicious, filling, and calorie-rich Finnish potato and herring casserole. If you have a chance, give it a try.

The Finnish dish Kalalaatikko is very simple and quick to prepare, not counting the oven cooking time. The result is a hearty, simple, home-cooked meal that can be served for both lunch and dinner.

Prepare the ingredients according to the list. Peel the potatoes, peel the onions, wash under running water, and dry.

Using a slicer, cut the potatoes into thin slices. Place half of the slices in the bottom of the pan and season with salt and pepper to taste.

Defrost the herring before cooking. Remove the head, tail, viscera, and bones. Cut the herring fillets into small pieces, arrange them on top of the potatoes, and lightly season with salt and pepper. If the herring contains caviar or milt, add that to the casserole as well.

Cut the onion into rings and place it on top of the herring layer.

Layer the remaining potatoes, sprinkling with frozen green peas if desired. Season the potato layer with pepper and a little salt to taste.

In a deep bowl, whisk together the milk, eggs, and flour. Season the mixture with a little salt and pepper.

Pour the milk mixture over the casserole and bake in a preheated oven at 190 degrees Celsius for 1.5 hours. If the potatoes are tender and well-baked when pierced with a knife, the casserole is ready to serve.

This casserole would be great served with homemade lightly salted cucumbers or tomatoes.
