Classic homemade tiramisu

  • 5 whole eggs
  • 250g of Savoiardi biscuits
  • 120 g of sugar
  • 300g of coffee
  • Bitter cocoa powder to decorate to taste

Classic homemade tiramisu, preparation

To prepare this recipe, start by making the coffee, then sweeten it to taste. You can leave it bitter if you like, since there's sugar in the cream.

Next, crack the eggs and separate the yolks from the whites. Mix the yolks with half the sugar, so only 60 grams. Mix with an electric whisk and, when the mixture is light and fluffy, gradually add the mascarpone.

Blend well, and only when you have a thick, compact cream can you stop and start whipping the egg whites. Clean the whisk thoroughly and then add the remaining sugar, the last sixty grams.

Beat the egg whites until stiff, then pour them into the bowl with the egg yolks and sugar. Stir with a spatula from top to bottom until the mixture is smooth and doesn't deflate.

Now that the cream is ready, all that's left to do is assemble the tiramisu. Take a baking dish and spread a little cream on top, followed by a layer of ladyfingers briefly soaked in the previously brewed coffee. Add a layer of mascarpone cream, followed by another layer of ladyfingers. Continue until all the ingredients are used. Make sure to top with the mascarpone cream and then a generous dusting of unsweetened cocoa powder. Refrigerate the dessert for a couple of hours to allow it to set. Consume within a day or freeze for up to 15 days.
