How to cook traditional horseradish sauce

  • 6 servings of your favorite horseradish sauce, you will need
  • 1 l of whole milk
  • 250 ml of whipping cream (33%)
  • 50 g of butter
  • 2 tablespoons of plain flour
  • 20 cm of horseradish (fresh root), salt, ground white pepper and lemon
  • Melt the butter in a saucepan and add the flour. Stir and fry for a while. A light buttery roux will form, which you can pour over with cold milk. Mix thoroughly and whisk to achieve a smooth consistency.
  • Let it simmer for about 15 minutes, stirring constantly. The sauce tends to burn, so don't leave the stove.
  • Meanwhile, clean the horseradish and grate it finely. Add it to the sauce just before the end of cooking so that it retains its aroma and pungency and does not become bitter.
  • Add the cream to the sauce and let it bubble gently for another 5 minutes.
  • Season the sauce to your liking – add lemon juice, a teaspoon of butter, salt and pepper. You can add another pinch of grated horseradish.
  • Serve horseradish sauce with smoked meat and bread or Karlovy Vary dumplings. Sprinkle lightly with freshly grated horseradish before serving.
