La auténtica receta siciliana de Angelina

  • 250 g de sémola muy fina (Panzani, en la sección de pasta)
  • ½ cubo de levadura fresca para panadería (aproximadamente 20 g)
  • 1 tazón grande de agua caliente con sal
  • Un puñado de aceite de oliva
  • Harina (3 o 4 puñados)
  • 250 g de salsa de tomate
  • 2 bolas de mozzarella
  • Emmental
  • 1 cebolla
  • 2 dientes de ajo
  • orégano, sal y pimienta

  1. Desmenuza la levadura y mézclala bien con la sémola. Prepara un recipiente con agua caliente y salada y añade gradualmente puñados de agua a la mezcla de sémola y levadura mientras amasas enérgicamente.
  2. Añade el aceite mientras amasas y continúa amasando durante 15 minutos. Espolvorea la masa con harina y sigue amasando hasta que esté suave y elástica, sin que se pegue. Forma una bola con la masa, enharínala y envuélvela en un paño de cocina limpio.
  3. Coloca todo en un plato bastante ancho, cúbrelo con otro paño limpio y déjalo reposar durante una hora.
  4. Mientras la masa reposa, prepara el relleno. Licúa la cebolla y el ajo pelado, colócalos en una cacerola y rocíalos con aceite de oliva (deben quedar cubiertos). Agrega una cucharada de agua y calienta a fuego lento durante 10 a 15 minutos (la mezcla debe cocinarse, pero sin dorarse).
  5. Licúa el puré de tomate, agrega una buena cantidad de orégano, sal, pimienta y una pizca de azúcar. Mezcla con las cebollas, prueba y ajusta la sazón si es necesario.
  6. Después de que la masa haya reposado durante una hora, amásala de nuevo con un poco de harina durante unos 5 minutos. Extiéndela con un rodillo y colócala en la bandeja para hornear.
  7. Coloca las lonchas de queso mozzarella y Emmental sobre la masa y añade la salsa de tomate. Hornea a 160 °C (325 °F) durante unos 30 minutos.

Crumble the yeast and mix it finely with the semolina. Prepare a bowl of hot, salted water and gradually add handfuls of water to the semolina-yeast mixture while kneading vigorously.

Add the oil while kneading and continue kneading for 15 minutes. Sprinkle the dough with flour and continue kneading until it is smooth and elastic, not sticky. Shape the dough into a ball, dust it with flour, and wrap it in a clean tea towel.

Place everything in a fairly wide dish covered with another clean cloth and let it rest for an hour.

While the dough is resting, prepare the filling. Blend the onion and peeled garlic, place them in a saucepan, and drizzle with olive oil (they should just be covered). Add a tablespoon of water and heat gently for 10 to 15 minutes (the mixture should cook but not brown).

Blend the tomato puree, add a generous amount of oregano, salt, pepper, and a pinch of sugar. Mix with the onions, taste, and adjust the seasoning if necessary.

After the dough has rested for an hour, knead it again with a little flour for about 5 minutes. Roll it out and place it in the baking dish.

Place the sliced ​​mozzarella and Emmental cheeses on the pastry, then add the tomato sauce. Bake at 160°C (325°F) for about 30 minutes.
