40 g of sugar

Vol au vent with berries: preparation

To prepare this recipe, start by preheating the oven to 200 degrees. Roll out the puff pastry with a rolling pin and cut out 6 circles using an 8 cm pastry cutter. In a small bowl, beat the egg and brush the pastry. Then, using a 4 cm pastry cutter, cut out 6 more circles.

Place one circle of puff pastry on top of the other, and prick the bottom center with a fork. Brush with egg and bake at 200°C (400°F) for 15 minutes. Meanwhile, wash the fruit and dry thoroughly. Make the cream by whisking the egg with the sugar, adding the vanilla and mascarpone. Mix well and let rest for a while.

It's time to fill the vol-au-vents, add the mascarpone cream and then decorate with the berries and sprinkle a little icing sugar.

Enjoy your meal!
