Mackerel in a jar in the oven
To cook mackerel in a jar in the oven, prepare the ingredients according to the recipe list. If the fish is frozen, remove it from the freezer ahead of time and let it thaw completely.
Peel and chop the vegetables. Cut the onion into half rings and grate the carrots on a coarse grater.
Wash the mackerel thoroughly under cold running water. Cut off the head and tail. Then remove the entrails, including the black membrane, and rinse the fish thoroughly. Pat it dry with paper towels and cut into medium-sized portions.
Place the prepared fish in a bowl, drizzle with lemon juice, and season with spices. Stir gently and let sit at room temperature for 10-15 minutes.
Then, layer the vegetables, a couple of black peppercorns, a bay leaf, and seasoned mackerel pieces on the bottom of a clean, dry jar. Using all the ingredients in this manner, alternate the ingredients.
Cover the jar with a metal lid (NO RUBBER!) or a double layer of foil. Place it in a ceramic dish and place it in a cold oven.
Cook the mackerel in a jar in the oven at 170 degrees Celsius (350 degrees Fahrenheit) for about 40-50 minutes. During the baking process, the jar will create a sufficient amount of liquid in which the mackerel will cook, so no oil or water is needed.
Let the dish cool slightly, then transfer it to a flat serving plate.
Serve mackerel with vegetables as a complement to any side dish. Delicious with mashed potatoes or boiled rice.
