Ingredients for about 8 portions
- 300 g of

- 150 g of cornstarch
- 6 eggs
- 150 g of butter
- 375 g of ricotta
- 200 g of sugar
- 40 g of cocoa
- 1 sachet of baking powder
- 2 limes
For the cream
300 ml whipping cream 45 g icing sugar 1 teaspoon vanilla extract
Soft plumcake with ricotta, cocoa and lime
To make this delicious treat, it's incredibly quick. Start with the dough, pouring the ricotta into a large bowl and using a mixer, gradually blending the ingredients, starting with the grated lime zest, then the sugar. Once absorbed, add the eggs, then the warmed melted butter, and so on, until you obtain a light, dense, and fluffy mousse-like mixture. Butter and flour a mold or line it with parchment paper and pour the batter in, smooth the surface, and bake at 180°C (350°F) for about 30 minutes.
Meanwhile, prepare the cream by pouring the cream, icing sugar, and a sprinkling of lime juice into a saucepan and whisking well until the mixture is frothy and compact.
Once the plum cake is cooked, let it cool slightly, remove it from the pan, then spread a layer of cream on top. Pipe the remaining cream in a piping bag and make little swirls. Sprinkle with a little more lime juice, and it's ready to serve. Enjoy!
