Tortellini salad
A super delicious and easy-to-make tortellini salad. Simply cook the tortellini and mix them with vegetables and homemade garlic sauce. This recipe is tried and true. I highly recommend it for parties!

- 150 g canned ham

My glass holds 250 ml. The vegetables were weighed before any peeling/preparation.
The calories were calculated based on the ingredients I used. These are approximate calorie counts, as even your yogurt or mayonnaise may have a different calorie count than the ones I used. The listed ingredients yield over a kilogram of delicious tortellini salad.
This tortellini salad is one of the salads I created at the request of my readers. I opted for a light garlic sauce, a mix of yellow cheese and ham, and lots of colorful and healthy vegetables. It turned out fantastic!
Tortellini salad recipe
Start by cooking the tortellini. Look for a 250-gram package in the store. I used cheese tortellini, but you can also easily choose those stuffed with spinach, mushrooms, and cheese. In a medium-sized pot, bring 750 ml (3 cups) of water to a boil. Add a level teaspoon of salt to the boiling water, then the entire package of tortellini. Stir the tortellini and cover the pot with a lid. Cook over low heat for the number of minutes recommended on the package, usually 14 minutes. Once cooked, transfer the tortellini to a colander and then to a bowl. Once cooked, you'll have over 500 grams of ready-to-eat tortellini. Set the tortellini aside to cool.
Tip: You can also choose instant tortellini, which are already cooked. These tortellini usually only need to be dropped into boiling water for a few minutes. You'll need up to 500 grams of product.
While the dumplings are cooking, start preparing the vegetables. Wash the tomatoes and cut them in half. You can also use regular, large tomatoes. In the summer, I recommend raspberry tomatoes. Drain the corn from a small can. The brine won't be needed for the salad.
Cut half a large bell pepper into small pieces. Remember to wash and remove the core and seeds. You can use any bell pepper: green, red, orange, yellow, or white. Red bell peppers are usually the sweetest. Wash, peel, and dice a large field cucumber or half a smaller "snake" cucumber. If the fresh cucumber is large and has a watery core, I remove it and leave it out of the salad. In season, I recommend field cucumbers. Young ones don't even need to be peeled. In winter, snake cucumbers are best.
Peel the cucumbers and trim the ends. Dice them as well. You can also substitute pickled cucumbers for the pickled ones. However, I recommend using pickled cucumbers to avoid the overpowering sweetness of the salad.
Cut 100 grams of yellow cheese into small cubes or slices (6 slices). Slice the canned ham the same way. You can also use any other ham you like, or boiled or roasted chicken.
Tortellini salad tastes delicious with a light yogurt garlic sauce. In a bowl, combine: three tablespoons of plain yogurt, one tablespoon of good mayonnaise, two smaller garlic cloves pressed through a garlic press, 2 tablespoons of lemon juice, half a level teaspoon of salt, and a generous pinch of pepper. Finally, the most enjoyable step is mixing all the salad ingredients together.
Since the ingredients don't include onion or leek, I recommend sprinkling the finished tortellini salad with chopped chives or adding more pepper. For more volume, color, and lightness, you can add crinkled lettuce, watercress, or arugula.
