- Ingredients
- 50 g of eggs + 1 yolk
- 2 cups of cake flour
- 50 g of lard
- 1/4 liter of semi-skimmed milk
- 50 g of granulated sugar
- grated zest of 1 organic orange to taste
- a teaspoon of fine salt
- 3/4 of a sachet of vanilla baking powder
- Orange-flavored icing sugar to taste to complete

Make a well in the flour in a bowl and pour the sugar and citrus zest into the center. Add the yeast dissolved in a drizzle of milk and begin kneading the ingredients in the well. Add the egg and continue mixing, gradually incorporating the flour. Finally, add the remaining milk, the softened lard, and then the salt.
Shape the dough into a ball and let it rest for 1 hour in a bowl covered with plastic wrap in the oven with the light on. After this time, roll out the dough into a 3 cm thick sheet, which you then fold into 6 cm diameter shapes. Let the bomboloni rise for 1 hour, still covered with plastic wrap, then brush them with a mixture of egg yolk and a drizzle of milk before baking at 180°C (350°F) for 20-25 minutes. Once cooked, remove them from the oven and let them cool before dusting with powdered sugar.
