Ingredients · Servings 1 30x40 cm mold
  • 500 g of type 0 flour
  • 350 gr of water (325 gr + 25 gr)
  • 10 g of salt
  • 10 g of fresh brewer's yeast (or 1 g of dry yeast)
  • 1-2 tablespoons tomato paste
  • 250 ml of tomato puree

Method · 30 min
  1. Combine the flour, yeast, and 325g of water (taken from the total) in a bowl and start kneading, then add the tomato paste and let it rest for a few minutes.
  2. Add the salt and the remaining water and continue kneading until the dough becomes smooth and well-strung. Transfer it to the work surface and fold it once (here's the guide to doing it best).
  3. Transfer the dough to a lightly oiled bowl, cover with cling film and let it rise for at least 45 minutes (or until doubled in size).
  4. Take the dough, deflate it with your hands and distribute it in the lightly greased pan, then let it rise for another 9 minutes.
  5. Wash and cut all the tomatoes.
  6. Season the passata with salt, pepper, oil, and basil and mix.
  7. Finally, fill the pizza base first with the tomato sauce and then with the tomatoes, distributing them evenly over the pizza.
  8. Cook for about 10 minutes in a preheated static oven at 220°C, then lower the temperature to 180°C and cook for another 15-20 minutes.
  9. Make the sauce: Place all the ingredients (basil, chives, parmesan, salt, and oil) in a blender or blender and blend until smooth.
  10. Add a little burrata to each slice.
  11. The tomato pizza is ready, all you have to do is top it with a little sauce and serve.
  • Total: 1 hour 10 minutes + 2-3 hours rest.
