The pillow cake combines cocoa dough with a cheesecake lattice. It looks luxurious and is easy to prepare

Simple to prepare and yet luxurious looking, this is how you could easily describe a pillow cake. It is interesting because of the color contrast between the cocoa dough and the cheesecake lattice, which in places sinks deeper into the dough.

Cheesecakes can take many forms, from those where cottage cheese makes up a large proportion of all the ingredients, to those where cottage cheese is a decoration and a more subtle companion to some contrasting ingredients. In this case, light cottage cheese and dark cocoa complement each other perfectly.

Pillow cake

Prepare the pillowcase cake from the introductory video, the following steps will help you achieve a fantastic result.

  • To make the dough for one baking tray (35 x 25 cm), you will need 5 eggs, 220 g plain flour, 120 g caster sugar, 125 ml oil, 125 ml water, 1 tsp baking powder and 3 tbsp cocoa. Grease the tray and sprinkle with coarse flour.
  • Prepare the filling from 500 g of cottage cheese in a tub, 1 vanilla pudding powder and 80 g of caster sugar.
  • Separate the egg whites and yolks. Beat the egg whites until stiff, gradually adding 60 g of caster sugar.
  • Beat the egg yolks and another 60 g of caster sugar until light in colour. Gradually add and beat in the water and oil.
  • Sift the plain flour, cocoa and baking powder into the egg yolk mixture. Mix everything together gently to form a smooth dough. Gradually add the prepared snow to the dough.
  • Pour the dough evenly onto a baking sheet greased and sprinkled with coarse flour.
  • Whip the cream together with the cottage cheese, vanilla pudding powder and caster sugar until smooth. Place it in a piping bag and pipe the cream onto the surface of the dough in a regular grid.
  • Bake the cake in an oven preheated to 180 °C for about 30 minutes. When baking, follow your experience with your particular oven. Check whether the cake is well baked by inserting a skewer into the cocoa dough; the skewer should come out dry.
  • Let the finished cake cool, cut it into desired pieces and serve.
