Mascarpone and biscuit truffles, a no-bake recipe.
Making these little truffles is very simple; just start by making the coffee, which should be set aside to cool. Now, crush the ladyfingers in a blender—be careful, they should be reduced to a fine powder. Meanwhile, place the mascarpone in a large bowl and add the now-cooled coffee. Add the powdered sugar to this mixture and begin mixing until all the ingredients are combined.

At this point, it's time to add the cookie crumbs. Stir and combine until the mixture becomes thick and compact. Using a spoon, scoop out small portions of the mixture and shape them with your hands into balls. This recipe makes about 30 balls. Dust the balls with unsweetened cocoa powder to coat them completely, then place them on a baking tray lined with parchment paper. Freeze for about half an hour, then serve cold.
