Uncle Ben's Zucchini Salad for Winter

To prepare the Uncle Ben's zucchini salad for the winter, prepare the ingredients according to the list.

Combine the tomato sauce ingredients: tomato paste, water, vegetable oil, salt, and sugar. Stir until the tomato paste dissolves. Bring to a boil over medium heat and simmer for 5 minutes.

Meanwhile, prepare the vegetables. Wash and cut the zucchini and bell pepper into small pieces, and cut the onion and tomatoes into half rings. Grate the carrots.

Add the chopped zucchini to the simmering tomato sauce. Bring to a boil and simmer for 15–20 minutes over medium heat, covered. The exact cooking time depends on the ripeness of the zucchini. If the zucchini is older, it's best to simmer it a little longer.

After 15-20 minutes, add the onion, carrot, and bell pepper to the zucchini. Bring to a boil again and simmer for another 15 minutes.

Add the tomatoes last. Stir, bring the future Uncle Ben's back to a boil, and simmer for another 15 minutes.

Five minutes before the end of cooking, add vinegar and curry powder. Add more salt and sugar to taste, if needed. I sometimes also add 1 teaspoon of ground coriander.

Divide the hot salad among the prepared sterilized jars. Seal with sterilized lids. Turn over and wrap until cool.

Uncle Ben's zucchini salad for the winter is ready!
