Imperial jerky with caramelized apples according to Mark Fichtner
Whether you're on the slopes or curled up with a good book in the warmth of your home, the Kaiserschranz is a must-try in any situation. The golden-brown pieces of fluffy pastry are served with a dollop of flavored sour cream and caramelized apple pieces.

- 170 g plain flour
- 35 g powdered sugar
- 200 ml milk
- 3 eggs
- 10 ml rum
- 4 g baking powder
- 1 handful of raisins
- 1 handful of almond flakes

- 2 apples
- grappa (or calvados, to taste)
- 40 g caster sugar
- 100 g sour cream
- ground cinnamon
Method · 45 min
- Separate the yolks from the whites of 3 eggs, put the whites in a mixing bowl and the yolks in another bowl. Add a pinch of salt to the whites and beat until stiff peaks form.
- Add 35 g of powdered sugar to the yolks, mix with a hand whisk, add 10 ml of rum, 200 ml of milk and mix well. Mix 4 g of baking powder into 170 g of plain flour and gradually add this mixture to the yolks. Beat until smooth and lump-free.
- Heat the melted butter in a pan and carefully fold the whipped cream into the dough.
- Pour the batter onto a heated pan and slowly fry the jerky until golden brown.
- Peel 2 apples, remove the cores and cut them into wedges. Check the crisp in the pan continuously.
- Preheat a second pan with a little melted butter. When the jerky is browned on one side, add the second pan upside down and quickly turn the jerky from one pan to the other, where it will brown on the other side.
- Cut pieces of fresh butter and place them on the sides of the pan, around the edges of the jerky.
- Using two wooden spoons, tear the finished jerky into pieces, fry, sprinkle with caster sugar, sliced almonds and a handful of raisins. Turn the pan several times and let the sugar caramelise.
- Heat a dry frying pan, add the sliced apples, drizzle with melted butter, sprinkle with caster sugar and caramelise. You can drizzle with grappa or calvados.
- Add 100 g of sour cream to a bowl, add a little caster sugar and ground cinnamon and mix everything thoroughly.
- We can serve. Transfer the crumb cake with almonds and raisins from the pan to a plate, add the flavored sour cream in a small bowl. Sprinkle the crumb cake with powdered sugar and place the caramelized apples on top.
