Pickled eggplant

1. Cut the eggplant into thin slices or cubes, as you prefer.

Ingredients · Servings 14
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 5 eggplants
  • 5 cloves of crushed garlic
  • 1/2 cup of vinegar
  • 1/2 cup of olive oil
  • Salt to taste
  • Oregano to taste
  • 5 bay leaves
  • 150 g of raisins
Method · 1 h 10 min
  1. Cut the eggplant into thin slices or cubes, as you prefer.
  2. Set them aside in a bowl of water.
  3. Cut the bell peppers like you would eggplants.
  4. Place the drained eggplant in a large baking dish and top with the bell peppers.
  5. Drizzle olive oil all over the mold.
  6. Cover with aluminum foil and bake in a preheated oven for 40 minutes.
  7. After this time, remove the paper and let it dry for a while longer to remove any water that has formed.
  8. Let it sit for 20 minutes, turn off the heat, and set aside.
  9. In a saucepan, add the olive oil, bay leaf, oregano, and vinegar.
  10. Mix everything together and let it boil for about 3 minutes, until the acid from the vinegar evaporates.
  11. Season the eggplant with garlic and salt.
  12. Add the raisins and finish by adding all the seasoning that was in the pan.
  13. Mix everything together and you're done.
