Wholemeal chocolate cookies

Chocolate-covered whole wheat cookies are delicious and appetizing. They taste similar to whole wheat digestive cookies, but aren't as salty, with a subtle hint of coconut. Perfect for those who can't resist a sweet treat but also want to quell their guilty conscience...

Wholemeal chocolate cookies – ingredients for about 35 pieces:

  • 90 g butter
  • 60 g light brown sugar (fine)
  • 1 egg
  • 20 g coconut flakes
  • 25 g bran (any kind)
  • 120 g whole wheat flour
  • 75 g wheat flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda

All ingredients should be at room temperature.

Using a mixer, cream the butter and sugar until light and fluffy. Add the egg and continue mixing until combined. Add the coconut flakes, bran, all-purpose flour, whole-wheat flour, baking soda, and baking powder. Mix until combined.

Form small balls from the mixture, place them on a baking tray lined with baking paper, and flatten them with a fork.

Bake at 180ºC for about 12 minutes or until lightly browned. Remove from the oven, transfer to a wire rack, and let cool.

In addition:

  • 100 – 150 g dark chocolate, melted

Melt the chocolate in a water bath (see how to do it), dip each cookie halfway in it, and place on a wire rack.
