Mannik with milk and no eggs
The main ingredients you'll need to make manna pudding with milk and no eggs are: milk (I used store-bought, not very fatty), semolina, sugar, wheat flour, and vegetable oil (I use unrefined corn oil).
First, pour semolina into a clean bowl.
While stirring, pour in the milk in parts.
Add sugar and vegetable oil. Mix until the mixture is as smooth as possible (you'll just have to stir a little longer to incorporate the oil into the dough).
Let's "forget" about the dough for an hour. The semolina will swell.
Prepare the oven ahead of time and grease the baking pan with butter, as you'll need to work quickly as the baking powder (or its substitutes) will react immediately. Add the flour mixed with fine salt (the coarse salt won't have time to dissolve) and baking powder to the milk mixture.
At this stage, you can add various fillings (just prepare them in advance): raisins, nuts, fruits and berries, seeds, coconut flakes, vanilla, sesame, cinnamon, cocoa...
I also recommend adding a little turmeric, it will color the dough a nice yellow color.
Mix the dough and transfer it to the prepared pan.
Place in a preheated oven at 180 degrees Celsius and bake for 45 minutes. The milk-based, eggless mannik should be golden brown and spring back slightly when pressed in the center.
The finished manna cake should be taken out, cooled and left to stand for several hours, so that it will look neater when cut.
