A quick, no-bake cake. Perfect for a Saturday dessert

This quick, no-bake mascarpone cake is a snap to prepare, incredibly fluffy and light. It simply melts in your mouth with every bite, making it a wonderful dessert to pair with afternoon coffee. Inside the mascarpone cake lies a surprise – a delicious caramel that will delight anyone who tries this no-bake dessert.

Ingredients · Servings 5-6 people
  • 400 ml of 30% cream,
  • 500 g mascarpone cheese,
  • 2 tablespoons of powdered sugar,
  • 1.5 packages of Śmietanfix or Śnieżka.
  • About 400 g of biscuits,
  • a can of caramel mass,
  • cocoa for sprinkling.
Method · 2 h 30 min
  1. Whip the well-chilled heavy cream. Add the powdered sugar, then a spoonful of mascarpone, and continue mixing until all the ingredients are used up. Near the end of whipping, add the stiffener (Śmietanfix or Śnieżka). The cream should be stiff, but be careful not to overmix, as it will curdle.
  2. Line the bottom of a 25 x 25 cm square baking pan with a layer of biscuits. Spread half of the cream mixture on top, then another layer of biscuits. Spread the caramel mixture over the top. Cover with another layer of biscuits and the remaining cream (try to even out the top).
  3. Sprinkle cocoa powder on top and refrigerate to chill for at least a few hours (preferably overnight). Serve this quick, no-bake mascarpone cake straight from the fridge.
