Mushroom sauce according to Jitka

Mushroom sauce, also known as houbovka, is one of the classic Czech sauces. It is exactly the dish that will remind you of summer and autumn walks in the forest. It is traditionally served with dumplings, but you can also try potatoes, pasta or fresh bread.

Ingredients · Servings 5
  • 300 g fresh forest mushrooms
  • 100 g onions
  • 65g oil
  • 150-200 g cooking cream 12%
  • 950 ml milk (as needed)
  • 60 g plain flour
  • salt
  • ground pepper
  • crushed cumin
  • lemon juice
  • parsley leaves
Method · 1 h
  1. Finely chop the peeled onion. Clean the mushrooms and also chop them finely.
  2. Heat a small amount of oil in a pot and let the chopped onion glaze.
  3. Then add the cumin and chopped mushrooms. Season with salt and simmer for about 10-15 minutes. If necessary, add a tablespoon of water at the beginning.
  4. In another pot, heat the remaining oil, add the flour and, stirring constantly, prepare a light roux.
  5. Pour the milk and cream over the roast and, stirring constantly, bring the sauce to a boil and let it simmer slowly for about 20 minutes, stirring occasionally.
  6. Add the sautéed mushrooms to the sauce and season with pepper and salt. You can also add a little lemon juice.
  7. If the sauce has thickened too much, thin it with a little milk and cook for about 5 more minutes. Finally, add chopped parsley to the sauce.
  8. Serve the sauce with a bread dumpling.
