Those soft, fragrant, yeast-scented pastries we used to buy from street vendors or bakeries before boarding the ferry in Karaköy... They always added to our enjoyment with a cup of tea on the ferry. Over time, their recipe became famous, spreading throughout Istanbul.

The secret lies in using butter or margarine, and replacing yogurt with lukewarm water. These two ingredients are the most important for that wonderfully soft texture. Ingredients for Karaköy-Style Bakery-Style Pastry Recipe

  • 2 cups of lukewarm water
  • 1 packet of dry yeast
  • 2 level tablespoons of powdered sugar
  • 100 grams of melted butter
  • 1 tablespoon of yogurt
  • 1 teaspoon of salt
  • 2 eggs (separate the yolk of one egg)
  • 1 tablespoon of vegetable oil
  • 4.5-5 cups of flour (as much as needed)

How to Make Karaköy-Style Bakery-Style Pastry (Poğaça)?

  • Combine the water, yeast, and sugar in a mixing bowl and mix well to activate the yeast. Add the oils, yogurt, egg whites, and salt, and continue mixing. Gradually add the flour. Knead until the dough is no longer sticky.
  • Cover the dough and let it rise for half an hour. Tear off tangerine-sized pieces from the risen dough and roll them into nice balls.
  • Add a teaspoon of olive oil to the egg yolks and brush it over the meringues. Use a fork to create patterns on top.
  • Bake in a preheated 180 degree oven for 20-30 minutes, checking frequently, until golden brown.
  • Then remove from the oven, let it rest for a while, and serve hot. Enjoy!
