Forget about pickled cucumbers. This version beats them hands down

Need some fresh cucumbers to spice up your main course? Instead of traditional cucumber salad, prepare them Korean-style. Their sweet and sour flavor will captivate your family's palates.

Ingredients · Servings 5-6 people
  • 6 green cucumbers,
  • 1 medium-sized onion,
  • 1 tablespoon of salt,
  • 200 ml of water,
  • 2 cloves of garlic,
  • 1 tablespoon brown sugar,
  • 1 tablespoon of oil or olive oil,
  • 2 tablespoons of rice vinegar or traditional vinegar,
  • 1 teaspoon of paprika powder (can be hot or sweet),
  • a fresh bunch of chives,
  • salt and pepper to taste,
  • 2 tablespoons of sesame seeds
Method · 45 min
  1. First, prepare the cucumbers and onion. Wash the vegetables under running water, removing any dirty or damaged parts. Halve the cucumbers lengthwise, then halve each half again. Now chop them into 3-4 cm pieces. Finely dice the onion.
  2. Place the vegetables in a large bowl, sprinkle with a tablespoon of salt, and then mix. Set aside for about an hour to release the water. Pour the water into a large pot or bowl. Whisk together the oil or olive oil, sugar, vinegar, paprika powder, salt, and pepper. Finely chop the chives and add them to the marinade. Peel the garlic, press it through a garlic press, and add it to the marinade as well.
  3. Mix all ingredients thoroughly. Place the drained cucumbers and onion in a large bowl. Pour the marinade over them and serve as a side dish. This snack can be stored in the refrigerator for several days. Garnish the cucumbers with sesame seeds. Optionally, you can spice up this recipe with a little soy sauce and maple syrup.
