The Secret to a Perfect Zucchini Salad Recipe
Squeezing out excess water from the zucchini is very important to prevent the salad from becoming watery. After squeezing out the water well, don't cook the zucchini completely; just let them soften. Once the zucchini has cooled, add the yogurt, preferably strained yogurt with a thick consistency.
How to Make Zucchini Salad?
For the zucchini salad, wash and dry the zucchini thoroughly. Then grate it into a deep bowl, squeeze out the excess water with your hands, and transfer it to a pan. Add olive oil and sauté for 10 minutes until softened.
Add strained yogurt and crushed garlic to a deep bowl.
Let the roasted zucchini cool on the side. Then add it to the yogurt, season with salt and dried mint, and mix well.
Add butter, walnuts, and spices to a small saucepan and sauté over low heat for a few minutes.
Place the zucchini on a serving plate and add the roasted walnuts on top.
You can garnish it with dried mint if desired.
